I think I would probably look at Italian for beginners courses that are by accredited teachers at the state or national level, like some of these here: Italian for beginners course and quality lessons. Feel free to write back if you need other home-school help.

My impression is that you may want to consider either any state or nationally recognized Italian for beginners curriculum instead of only California accredited Italian for beginners curriculum. A nationally recognized Italian for beginners course will open a pretty good amount of more doors.
